A traditional Japanese kitchen knife with versatile use, particularly recommended for small fish, meat, oysters, and other seafood.
The knife features a long blade with a pointed tip, ideal for opening shells and precisely slicing pieces of meat. The blade is single-beveled, which facilitates working with fish.
The knife’s blade is hand-forged from reliable Japanese Yasuki-Shirogami No. 2 steel, renowned for knife production. With proper maintenance, it achieves exceptional sharpness and retains it for a long time. Traditionally, these knives are not stainless.
