Japanese Hand-Forged Kitchen Knife Unagiri Kantoh (Kantō) 135mm
The traditional, professional Unagiri knife comes straight from the workshops of Japanese metalworking masters in the Kantō region. It is dedicated to fans of various fish dishes and features a short blade with a slanted edge and pointed tip for precise cuts. It is specifically designed for slicing eels and congers ("unagiri" in Japanese literally means "eel cutting"). The single-bevel blade allows for one smooth motion along the backbone of long fish.
The knife blade is hand-forged from reliable Japanese Yasuki-Shirogami No. 2 steel, an excellent choice for knife production. Properly maintained, it achieves and maintains a very sharp edge. Traditionally, these knives are not stainless.
The Kantō knife is popular among both professional chefs and enthusiasts of Japanese cuisine.
