Japanese Hand-Forged Kitchen Knife Deba 120mm
The Ko-Deba knife is a traditional Japanese kitchen tool mainly used for cutting small fish and precise slicing and filleting of meat.
This knife features a short yet wide blade with a single bevel. The blade is relatively thick, rigid, and slightly convex.
The knife’s blade is hand-forged from reliable Japanese Yasuki-Shirogami No. 2 steel, renowned for knife production. With proper maintenance, it achieves exceptional sharpness and retains it for a long time. Traditionally, these knives are not stainless.
The Deba knife is popular among both professional chefs and enthusiasts of Japanese cuisine.
